■Features:

This santoku knife is crafted through fire forging by one of Tosa's leading knife smiths. It features a cutting edge made of Hitachi Yasugi's top-grade steel, Aogami Super. The fire-forged method involves hammering and stretching thick steel, resulting in a fine-grained structure. Moreover, careful heat treatment maximizes the properties of Aogami Super steel.
The handle adopts a unique octagonal design with white oak that is cut from logs, naturally dried for 1 to 2 years, and then lightly scorched. This process reveals the distinctive patterns of white oak and creates a gradient of black from the scorching. For added durability and chemical resistance, the handle is finished with a coat of lacquer.
This knife is versatile, suitable for cutting meat, fish, and vegetables, making it perfect as the first knife for a household. Among the many santoku knives available, this one is our shop's top recommendation, allowing you to experience the craftsmanship of an expert.

■About sharpness:
This knife is made of steel, so it is coated with blade varnish to prevent rust.
Therefore, if you use it straight out of the box, it will not be as sharp as it should be.
The varnish will come off as you use it, but you can experience the original sharpness by sharpening it.

■Note:
From forging to sharpening, we make our products by hand.
During the manufacturing process, scratches and peeling of the oxide coating may occur on the blade.
For this reason, we do not inspect for small scratches or peeling of the oxide coating.
Since these are free forged products, there may be differences in size for each product, and the blade may have slight distortions or bends.
Do not use a dishwasher or dryer.
Since these are steel knives, they will rust.
Since they are black-finished, rust is less noticeable, but please wipe off moisture frequently before use.
The blue paper super of the cutting blade is hard and is more difficult to sharpen than ordinary knives.
