除了在砧板上切蔬菜,或手拿蘿蔔、根菜、紅薯類食材分切,還可用其削皮。刀刃極薄、十分鋒利。採用高碳鋼的超青紙鋼,刀身是黑打鑄造,留下氧化鐵的覆蓋,可避免刀身生鏽的煩惱,達到「又鋒利又不怕生鏽」的目的, 外觀雖然不平滑, 但可以感受到鑄刀師傅的心血結晶。極致鋒利的刀刃,做到不破壞食材的纖維和養分。


甚麼是黑打廚刀?

黑打廚刀保留了鑄造過程中留低的鱗片氧化鐵,它可當作碳鋼上的保護塗層,以防止生銹。黑打廚刀能降低碳鋼刀的被動性,並賦予了廚刀具有特色、質樸的美學等受到很多刀友的重視。黑打廚刀的刀身外觀、均勻性和耐用性方面等都有好大的差異,所以不適合完美主義者。當然,即使黑打廚刀具有塗層,但只適用於刀身兩側,建議每次使用後都需要磨刀保存。
