This knife is hand‑forged by fire‑welding Aogami Steel No.2 to soft iron. The forging is carried out at as low a temperature as possible to draw out the full performance of Aogami No.2, resulting in a blade that embodies traditional craftsmanship. Its sharp edge lasts a long time, making it ideal for professionals and users who demand high‑quality Japanese knives.
The handle features a water buffalo horn ferrule, giving it the appearance and feel of a traditional Japanese-style knife.
As our kitchen knife is very sharp, we recommend that you use a chopping board made of unfinished soft wood. Wash, wipe, and let it dry after use to keep it clean and hygienic.

The knife is sharpened to a level suitable for general use, but the final edge should be adjusted by the user according to personal preference.

Because the blade is forged at the lowest temperature possible, small gaps may be visible along the weld line. These are considered normal for this product and are not defects.
Do not use in a dishwasher or dryer.
