This Japanese gyuto knife combines a black-finished blade, a hallmark of Tosa-uchi blades, with a distinctive handle.
The Aogami No. 2 composite material is hammered, stretched, and finely textured before being heat-treated at the optimal temperature, resulting in a blade that combines sharpness and durability. The
white oak is sawn from a log and allowed to air-dry for one to two years before being charred, resulting in an octagonal handle featuring the unique white oak pattern and a scorched black gradation.
A lacquer finish adds durability and chemical resistance to the distinctive handle.
Although it's called a gyuto, it's a versatile knife that can also cut things other than meat and is sometimes referred to overseas as a chef's knife.
Its longer and narrower blade than a santoku knife makes it easy to cut blocks of meat and de-vein.
This Japanese gyuto knife is recommended for those who value not only the blade but also the handle.
■About sharpness:
This knife is made of steel and has been coated with blade varnish to prevent rust.
Therefore, when used straight from the box,
the knife will lose its original sharpness. The varnish will come off over time, but you can experience its original sharpness by sharpening it.

As this is a hand-forged product, there may be scratches or peeling oxide film on the blade.
As this is an open-forged product, there may be differences in size between products, and the blade may have slight distortion or bends.
Do not use in a dishwasher or dryer.
