The surface of the Fuji Knife features a landscape of Miho no Matsubara, a World Heritage Site, with Mount Fuji, the symbol of Japan, depicted in an ukiyo-e style. Part of the spine of the blade extending from the handle represents the snow-capped Mount Fuji.

◆Shirogami No. 2 genuine blade
The blade is a genuine Japanese blade made from Yasugi steel, Shirogami No. 2. Shirogami No. 2 is a typical Japanese carbon steel used for Japanese kitchen knives and other blades, and is characterized by its excellent sharpness and ease of resharpening.
The cross section of the blade has a three-layer structure, with soft mild steel on both sides and hard steel in the center, so it can be sharpened with minimal force.
If you feel that the fit between the blade and handle has loosened, you can easily adjust it by lightly tapping the crimped part with a hammer on a hard surface such as iron.
*The key is to tap lightly, so be careful not to tap too hard and tighten the rivet too much.

◆ Support for efforts to develop successors

In Ono City, Hyogo Prefecture, the local industry has long produced cutting tools such as scissors and sickles, but the techniques are facing the risk of disappearing due to the aging of craftsmen and a lack of successors.
In the midst of this, one young man established a factory in July 2018 to train successors to become knife craftsmen, and currently, with the support of experienced craftsmen, two young craftsmen are working on producing these knives.
Making real blades is full of difficulties and there is still a long way to go, but the quality of our products has improved dramatically.
