■Features:
This chef's knife is handcrafted by one of Tosa's leading knife makers.
The cutting edge uses Aogami No.1 steel, a high-grade steel from Hitachi Yasugi.
The thick steel is hammered and stretched using the traditional fire-forging method
, resulting in a dense structure. Furthermore, meticulous heat treatment maximizes the characteristics of Aogami No.1 steel.
Although it is called a chef's knife, it is a versatile knife that can cut things other than meat and is known as a chef's knife overseas. It has a longer and narrower blade than a santoku knife, making it easy to cut blocks of meat and tenderize them.
In particular, the Motokane Kurouchi chef's knife has a straighter blade shape than a typical chef's knife, which is designed to allow food to separate more smoothly when cutting.
The handle is made of octagonal zelkova wood to match the traditional Japanese aesthetic.
This versatile knife is recommended for a wide range of people, from home cooks to professional chefs.

■Regarding sharpness:
This knife is made of steel and has been coated with a varnish to prevent rust. Therefore, it will be less sharp than its original sharpness when used straight out of the box.
The varnish will wear off with use, but you can experience its original sharpness by sharpening it.
Also, the initial blade is sharpened to be versatile and suitable for a wide range of users. It is finished to make it easy to sharpen to your liking, so please sharpen it yourself to achieve your desired level of sharpness.

■Caution:
All knives are handmade from forging to sharpening.
Due to the manufacturing process, scratches and peeling of the oxide film may occur on the blade.
For this reason, we do not inspect for minor scratches or peeling of the oxide film. As these are free-forged products, there may be differences in size from product to product, and there may be slight distortions or bends in the blade.

As these are steel knives, they will rust.
The black finish makes rust less noticeable, but please wipe off moisture frequently before use.
