Features
This knife is hand-forged by fire-welding Blue Paper Steel No.2 to soft iron. The forging is done at as low a temperature as possible to bring out the full performance of Aogami #2, resulting in a blade packed with traditional craftsmanship. Its sharp edge lasts a long time, making it an excellent choice for professionals and users who value high‑performance Japanese knives.
The handle features a water buffalo horn ferrule, giving it the look and feel of a traditional Japanese-style knife.
About Sharpness
The knife comes with a general-purpose edge suitable for normal use, but the final sharpening should be done by the user according to personal preference.
Notes
• Because the blade is forged at the lowest temperature possible, small gaps may be visible along the weld line. These are considered normal for this product and are not defects.
• Not dishwasher- or dryer‑safe.
• As this is a carbon steel knife, it will rust. Please wipe off moisture frequently during use.
As our kitchen knife is very sharp, we recommend that you use a chopping board made of unfinished soft wood. Wash, wipe, and let it dry after use to keep it clean and hygienic.
