This is a beautiful authentic Japanese knife with a layered pattern on the blade and a rosewood handle.
The blade is made of white paper steel, which is characterized by its sharp cutting edge.
It is easy to sharpen and easy to maintain.
It is a smaller version of a YANAGIBA knife, also known as a horse mackerel splitting knife or a shellfish splitting knife, so it is easy to use for detailed work.
In addition to filleting small fish, it can also be used for detailed work such as peeling vegetables and fruits.
